select case when datepart(daymfecha)='Lunes' then count(1) end as lunes,
case when datepart(daymfecha)='Martes' then count(1) end as Martes from tabla where fecha between inicio and fin
Revisa cual es a funcion de datepart que te regresa el nombre del dia :P
